We see the bubbles coming out of the sodas are made of a gas called carbon dioxide. This gas is in chemical equilibrium with the solution. This equilibrium depends on temperature, pressure, Ph and salts that are dissolved.
When you uncover a soda you increase the temperature; if you add an acidor a salt, really leaving more bubbles. When the bubbles are combined with sugars, fats or proteins, a more stable foam
